Bruised apple skin, lemon zest, charred wood and chalk dust make for a pungent but rather austere aromatic display. The palate is pithily concentrated, firm and full. The gripping finish is alkaline, stony and glowing with piquancy of crushed fruit seeds as well as seedy huckleberry. Thankfully, it also delivers tart crab apple and lemon juice to serve for invigorating refreshment. - David Schildknecht, Nov. 2020
