Not many people use Savagnin grapes for their sparkling wines in the Jura. Domaine du Pelican is different, and they are releasing a 2018 Brut S Zero produced exclusively with Savagnin grapes. It's a frothy, obviously young and primary sparkler with a very expressive nose of yellow plums, pears, aromatic herbs and spice (I could swear it was even nutty!) and a delicious palate, where the wine is fresh and balanced and has a strong mineral strike, finishing almost salty. It's super tasty and very different from the rest of the sparkling wines from Jura; it has a strong character. I simply love it! - Luis Gutiérrez, Apr. 2021
